AUTUMN SQUASH APPETIZER

Wow!  Mark’s creative side is going crazy…now he has this wonderful new squash appetizer:

Roasted spaghetti squash tossed with sauteed spinach and roasted pumpkin seeds and then drizzled with dark pumpkin seed oil

Ok…I’m just going to say it….Delicious! 

Tried it …well …more than once and we will leave it at that.

A PERFECT AUTUMN DAY!

 A Vermont perfect day….I can’t stop smiling. 

Mark is also in a good mood and has added a wonderful autumn dish to our menu.  “Slow Roasted pulled pork with pumpkin gnochi and pecans”. 

Maybe that is the reason I can’t stop smiling.  Either way….I am in the right place at the right time.
